The food and wine journey among the products of Trentino begins again with Chef Peter Brunel and the ๐ฟ๐‘’ ๐น๐‘Ž๐‘š๐‘–๐‘”๐‘™๐‘–๐‘’ ๐‘‡๐‘Ÿ๐‘’๐‘›๐‘ก๐‘–๐‘›๐‘’ ๐‘‘๐‘’๐‘™ ๐‘ฃ๐‘–๐‘›๐‘œ project with Andrea Forti Wines.

Aperitif with Trentodoc Brut paired with two mountain cheeses: Stavel di Malga and Malghe dell'Orso
Followed by the first course consisting of artichokes and quail, a revival of the poor dishes of the 1500s.
Continuing with a plate of purple cabbage, raspberry vinegar and chestnut flour revisiting the daily life of the monks.
We then move on to taste the Sunday dish, the most important dish! Baccalà del monaco, a dish that monks used to eat during special feasts or celebrations.
To conclude, a sweet dish: pain d'epices with candied fruit.

A sensory experience to discover the Trentino cuisine of the past, accompanied by Chef Peter Brunel and the authoritative guide Alessandro Garofalo, innovation expert and longtime friend of the Chef. Flavors that revisit a menu used by the friars of the 16th century with the extraordinary accompaniment of wines from the Andrea Forti Wines cellar, Trentingrana cheeses to taste and art with Marco Filippone.
