Chef Peter Brunel accompanied by the authoritative guide Alessandro Garofalo, innovation expert and longtime friend of the Chef, will lead you to discover the Trentino cuisine of the past by revisiting a menu used by the friars of the 16th century with the extraordinary accompaniment of wines from different local wineries and Trentingrana cheeses. The protagonists of the menu are four dishes, "two of which are poor and one more complex, to recreate the menu of the friars", and a dessert, based on eggs exactly as it happened in the 1500s. All dishes will be served by the spoon, because it was part of their daily life: for six days a week they ate soups of bread and vegetables, while on Sundays, the day of celebration, a meal of meat or fish was introduced into the diet. Paired with five wines chosen from the labels of the partner wineries of the event, matched according to the ingredients that most identify areas of belonging and personal stories and producers.
